Being Aust day it seemed like the perfect day to crack open the latest homebrew. 97% pale malt, 3% crystal malt. Simcoe for bittering. Simcoe, Mosaic, Chinook, Centennial Cascade added at three stages. Beersmith predicts 111 IBU but it’s probably closer to 65 IBU. The starting gravity seemed ridiculously high (1070) but I think it was from all the hop pellets. Realistically it think it’s around the 6-7% ABV. Orangy yellow, opaque with medium body and moderate carbonation. Fine slightly yellow head packed with small bubbles of hop oils. Tropical fruit, pine and moderately sweet booze aroma. Caramel malt upfront followed by citrus, tropical fruit, pine and a strong grapefruit aftertaste. You can feel the resin sliding off the tongue with a lasting bitterness. There’s a rich malt and boozy flavour I’d like to remove. Not bad but definitely could be improved.
