Berry Nicecream Yule Log Top Layer 4 frozen bananas 2 cups frozen berries (I used strawberries and raspberries) 1 tsp vanilla extract 1 Tbsp @natvianaturalsweetener stevia 4 Tbsp Natural Raw C coconut water Blend all in a blender until smooth. Test for sweetness and add more as required Middle Layer 4 cups frozen berries (I used cranberries, blackberries, cherries and blueberries) 1 cup coconut milk 1 Tbsp Norbu Sweetener Blend all in a blender until smooth. Test for sweetness and add more as required Bottom cake layer 4 Tbsp almond meal 1/4 cup @natvianaturalsweetener Vitarium Fangks Chocolate Milk Mix 1/2 tsp baking powder Pinch of salt 1 egg 2 Tbsp Mayvers Almond coconut and cacao spread 1/2 cup Almond Breeze Australia almond milk vanilla unsweetened 1 tsp vanilla extract Mix ingredients together and put into a greased and lined loaf tin Bake for 20-30mins at 180C/350F Let cool completely Assembly Cook cake base first. In a clean loaf tin, lined with a few layers of Cling Wrap overhanging sides, spoon in top layer until between 1/3 to 1/2 filled. Flatten top Layer on middle layer icecream until near top of loaf tin Top with cooked cake base (as this will become the bottom later) and push down gently to join Freeze for a few hours or overnight. Turn out onto a plate and decorate with fresh berries and dust with icing mix Cut with a hot knife Serve quickly as nicecream melts! Enjoy! Jo @healthyeating_jo
