Biancas. It paved the road to many chefs who spun off to create their own brands. But Biancas was one of the true originals - a pioneer in the fine dining category when we couldnt even understand terms like deconstructed and infused. Thanks for taking us all there Bianca and Nickola Tsanov. A lot of great memories with your team under that roof. I expect ACT II of your life - whatever it may be - to be remarkable.
