Bibingka is a delicacy normally associated with Christmas season as before, it is normally only cooked during that period. Nowadays, it can be enjoyed throughout the year. The main ingredients are galapong (rice flour) and gata ng niyog (coconut milk). It is traditionally cooked by placing the mixture in an earthen ware lined with banana leaves (which also imparts a unique taste) then placing the earthen vessel in between live coals. The smoke from the coals also contributes to its taste. It is usually served topped with butter, slices of salted egg, a sprinkle of sugar and grated coconut. Its origin is said to be Chinese.
