Big Kid Bacon-Pecan Belgian Waffles (By Emily Phares) 1 3/4 cups all-purpose flour 1 Tbsp baking powder 1/4 tsp salt 2 egg yolks 1 3/4 cups almond milk 1/2 cup vegetable oil 1/2 cup chopped pecans 1/2 cup low-sodium bacon bit 2 egg whites In a large bowl, stir together flour, baking powder, and salt. In a separate bowl, combine egg yolks, almond milk, and oil. Pour egg mixture into dry ingredients and stir until just mixed. Add in chopped pecans and bacon bits. In a separate bowl, beat egg whites until stiff peaks form. Gently fold into batter until just combined (should have a fluffy texture). Allow batter to rest for 4-5 minutes. Spray your pre-heated waffle iron with non-stick cooking spray and scoop batter onto surface. Cook until batter is golden brown and easily lifts up from the griddle. Serve warm with maple syrup. Makes 8-10 waffles.
