Birthday Cake It was Small Herselfs very first birthday last week and in keeping with what we usually do for birthdays here we had some people over for cake and tea. The whole point of a cake (and a birthday cake especially), I feel, is that its one big thing that everyone can have a bit of. So catering to all the visitors needs is very important to me. The cake needed to be gluten free, chocolate free, dairy free, nut free and low in sugar enough for small people. Ingredients (makes one massive, giant, huge cake, half the recipe would make more than enough for a normal sized cake) 120ml sunflower oil 500g gluten free flour 4 tsps gluten free baking powder 100g light muscovado sugar 300g grated carrot 3 ripe bananas mashed 4 eggs 1 tsp cinnamon 1/4 a nutmeg, grated Icing 250g soya butter 500g icing sugar 1tsp vanilla extract Pinch or two of cinnamon Method 1. Mix all the ingredients together. Youll need a pretty big bowl if youre making this size of cake. 2. Grease and line two 8 inch round tins with deep sides. Divide the mixture equally into the tins and bake in a 150c fan oven for about an hour. 3. Remove the cakes from the oven and leave to cool in the tin for a few minutes. Remove to a wire rack to cool completely. The gluten free-ness of the cake makes it pretty crumbly and delicate. Like meself after a big night out. So handle it with care! 4. Beat the ingredients for the icing together with an electric mixer until smooth and creamy. 5. Slice the cakes in half horizontally and sandwich them back together with some of the icing. Cover the cake with the rest of the icing. Do some fecky around stuff on the top with writing icing, sprinklesy things and other silly cake topping bits. I clearly went for an ugly 70s couch print for the decoration. The most important person of the day, Small Herself, loved it. I tried to keep the icing on her bit to a minimum but it was her birthday so I didnt worry too much. Small Himself loved it and helped by cleaning up the crumbly left over bits. With his mouth. The other party guests enjoyed it. Or said they did anyway, and no deaths have been reported yet. So this is #glutenfree, #dairyfree, #nutfree, #lowinsugarifyoulickofftheicing and #70scouchugly.
