Blackberry Oatmeal Muffins (Photo by Lorinda Fleming) 1 1/2 c. flour 2/3 c. old fashion oatmeal 1/2 c. sugar 1 Tbsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 1/2 tsp. cinnamon 1/4 tsp. cream of tarter 1 c. almond milk 2 Tbsp. olive oil 1 Tbsp. vanilla 1/2 c. egg substitute or 2 large eggs 1 1/2 c. berries, thawed if frozen nuts, chopped, optional Cooking spray Preheat oven 400 degrees. Combine all dry ingredients in bowl with a whisk. Blend well and set aside. Combine liquid ingredients in another bowl and blend thoroughly. Do not add fruit yet. Make a well in the center of your dry ingredients and add liquid ingredients. Blend well with spoon. Using a mixer might over mix your muffins. This will cause them to not bake properly. Add berries and mix gently. If adding nuts, this is where you will add them as well. Mix only until blended. Coat non-stick muffin tin with cooking spray and add equal amounts of batter in each cup. Bake for 18 minutes. Allow to stand in tins for 2 minutes once removed from oven.
