Blast from the Past; last three days!! Ends on Sunday, 26th October 2014. Kainaz brings back 10 of our most popular items created over the decade and explains their genesis. (1) Truffle Brownie. We got the idea for this brownie from Antonio Carluccios restaurant in Putney, South West London. Loved the idea of writing the name in a continuous lower case script, it served us well. (2) Sticky Chocolate Walnut Pie Tart. The inspiration for this tart came from my many childhood trips to Lonavala and the copious amounts of fudge I consumed. I improved the fudge by making it with chocolate instead of cocoa and baked it in a tart. It was a huge success. (3) Silk. Thick dense chocolate ganache. We always had a big tapela (vessel / bartan) of this at home due to my mums home baking business. We used to eat pots of it at all times of the day and night. I flavoured it with hazelnut and later with orange and Silk became my dads favourite dessert. (4) Tiered Temptation. Mums signature chocolate orange mousse sandwiched between layers of soaked and moist rum flavoured cake and finished with a thick layer of chocolate ganache. (5) No Name. I was told prunes would not sell. And we could not find a suitable name for a Chocolate & Prune pastry. But sell it did, and in hindsight, the No Name name was not too bad either. (6) Almond Croissant. I fell in love with Almond Croissants after eating it at Maison Blanc in London. They make it best, I pay homage to their product at Theobroma. An indulgent breakfast treat made with torn croissant and moist frangipane. I don’t eat it everyday, just often enough. (7) Lemon Mountain Cake. My moms home baking business was famous for its lemon swiss roll. I took the component parts and turned it into a pastry. Nothing fancy, nothing modern. Old-fashioned nostalgia sells well too. (8) Chicken, Pesto & Cheese Sandwich. We introduced sandwiches based on customer feedback and over the years the chicken, pesto and cheese combination become a bestseller. (9) Carrot Cake. We had to plead and sometimes force our customers to buy our Carrot Cake when we started; we had to assure them that it was as tasty and indulgent as the other products on offer. Our spiced carrot cake won them over and converted skeptics into fans. (10) Apple Cinnamon Blondie. Apple and cinnamon are a marriage made in heaven. Our simplest products have always performed best.
