Blue Ribbon White Chocolate Macadamia Nut Cookies 1 18.15 oz package white cake mix, divided 1/2 cup (1 stick) butter, softened 3 T packed brown sugar 2 large eggs 2 tsp vanilla extract 2 cups white chocolate chips 1 cup coarsely chopped macadamia nuts Preheat oven to 350 degrees. Position oven rack in middle of oven. Spray cookie sheets with nonstick cooking spray. In a large mixing bowl add half of the cake mix, butter, brown sugar, eggs, and vanilla. Blend with and electric mixer on medium-high speed for 1-2 minutes, until blended and smooth. With a wooden spoon, stir in remaining cake mix, chocolate chips, and nuts until all dry ingredients are moistened. Drop by tablespoonfuls, 2 inches apart onto prepared cookie sheets. Bake 10-13 minutes or until golden at the edges and cookies are just barely set. Cool for 3-5 minutes, then transfer to wire racks and cool completely.
