Blueberry & Cinnamon Scrolls with lemon icing!!! All I can say is this anyone and everyone should give these a go at making. That is if you have a slow cooker, or clay pot. In less than ten minutes to prepare at most 15 minutes. And I let the cooker do its magic. Im super impressed it looks like a bakery bought sweet that I made myself. The taste was fantastic and now Im making a variety of savoury ones from Mediterranean pizza, vegemite and chocolate scrolls. This will make for a great treat to take to a dinner, birthdays or afternoon tea. These would be one if the best ideas for kids lunch box snacks as well!!!! Dough: 2 cups self raising flour ( sifted) 1 1/4 cup light cream 2 teaspoons caster sugar Filling: 2 cups blueberries ( I used frozen slightly thawed) 2 teaspoons sugar ( for coating blueberries) 2 table spoons butter melted 1/2 cup brown sugar 2 teaspoons cinnamon sprinkled Lemon icing: 2 cups icing sugar ( sifted) 2 tablespoons butter melted 1-2 tablespoons lemon juice squeezed Optional extra: 1 teaspoon lemon zest Using a slow cooker, line with baking paper up to the top. This will help to pull out once cooked. In a small bowl place blueberries and 2 teaspoons sugar, lightly mix and leave aside. To make your dough place flour, cream and sugar in a bowl. Mix till it becomes a moist dough. Lightly flour bench and place the dough and gently knead. Till it becomes smooth and binded. No more than 2 minutes. Roll into a rectangle shape about 30cmx 20cm Brush melted butter first. Sprinkle cinnamon all over, place blueberries, brown sugar all over. At one end of pastry begin to roll into a log shape. Using a knife cut into desired slice thickness. Place into slow cooker all next to each other, close together. Bake on high for 1 1/2 hours. Allow to cool for 15-20 minutes in cooker. Lift out and place on serving tray. To make icing melt butter. Place into a bowl add lemon juice and sifted icing sugar. Stir till all combined. Pour into a piping bag or sandwich lock bag snip corner to make a piping bag. Then squiggle over scrolls till coated. Dust with icing sugar. ( optional) These are so yummy and super super easy. The kids could make these with ease. Have fun with the various fillings. Enjoy!!!!
