Blueberry Hazelnut Spelt Muffins 1 cup whole wheat flour 1 cup spelt flour 1 tbsp. flaxmeal 1 tsp. baking soada 1 tsp. baking powder 1/2 tsp. salt 3/4 cup sugar 1 cup almond milk 1 tsp. vinegar 1/2 cup hazelnut butter 1/4 cup greek plain yogurt 1 egg 1 tsp. vanilla extract 1/3 cup hazelnuts, chopped and toasted 1 1/2 cups blueberries Whisk together, flours, flaxmeal, baking soda, baking powder and salt. blend Blend almond milk and vinegar. let stand 5 minutes. while milk sits place hazelnut butter, sugar, yogurt, egg and vanilla in food processor. Blend, you can use a hand mixer. Add milk to food process and blend. Mix the wet and dry with blueberries & hazelnuts Divide batter into 12 muffin tins. Bake 350 degrees for 20 - 25 minutes
