Blueberry Paleo Pancakes Ingredients: 2 eggs, lightly beaten. 400ml coconut milk 2 tablespoons coconut oil or butter, plus extra for frying 4 cup coconut flour 4 cups buckwheat flour 2 teaspoons baking powder 1/2 cup shredded coconut, optional. 1/2 cup frozen blueberries Combine eggs, milk and oil in a mixing bowl. Stir in flour, baking powder, salt and coconut until combined. Fold through blueberries. Heat a generous amount of oil or butter in a frying pan over medium heat. Pour in some batter. When the surface begins to bubble, flip carefully and cook on the other side. Repeat, until all the batter is used. Serve with yoghurt and extra shredded coconut.
