Boom! I did 15 lbs of pork shoulder for New Years Day. Smoked for 10 and a half hours. These are the inaugural Carolina barbecues from my new smoker. One shoulder injected with a homemade blackberry pepper barbecue sauce and one in a mustard crust with homemade classic Lexington sauce. Seems to be getting solid reviews (y) only gonna get better and better at this. The next cook is on Saturday for the Panthers playoff! Let us know if you plan to come.
