Boozy Banana Bread by M Miller Ingredients (bread) - 1 1/2 cup mashed, overripe banana - 1 cup brown sugar, divided - 6 tablespoon butter, melted - 1 shot of Kahlua - 1/3 cup vanilla yogurt - 2 eggs - 1 1/2 cup flour (whole-wheat suggested) - 1/4 cup flaxseeds - 3/4 teaspoon baking soda - 1/2 teaspoon salt - 1/2 teaspoon cinnamon Ingredients (glaze) - 1 tablespoon butter - 1 tablespoon Kahlua - 1/4 cup confectioner’s sugar Instructions 1. Preheat oven to 180 degrees. Grease a 25 cm loaf pan and set aside. 2. Mix mashed banana, half the brown sugar, butter, and Kahlua in a skillet. Cook on medium high until the mixture bubbles. Allow to cool and then pour into a large bowl. Add remaining sugar and eggs and whisk until smooth and even. 3. In a separate bowl, mix flour, flaxseeds, baking soda, salt, and cinnamon. Add to first mixture and whisk until just blended. Pour into pan and bake for 50 minutes or use a toothpick: if pricking the loaf in the middle comes out dry, the bread is done. Cool on a wire rack. 4. Prepare the glaze by heating butter and Kahlua in a saucepan (using a low heat), gradually mixing the in confectioner’s sugar while maintaining a smooth consistency. Pour over the bread while it’s still warm.
