Bread of the day: Country with roasted pumpkin seeds, twice baked potatoes stuffed with cauliflower and topped with cheese, and served with a bottle of Guiness beer. Greetings friends. Todays dish is based on the idea of preparing something filling and hardy as cool temperatures arrive and sporting events take center stage. There are so many ingredients that can be included in bread, but, one of my favorites is roasted pumpkin seeds. The taste is out of this world. To accompany the Country bread with roasted pumpkin seeds, I prepared twice baked potatoes stuffed with cauliflower and topped with grated Parmesan cheese. Preparing twice baked potatoes. Ingredients: 1. Large baking potatoes. 2. 1 teaspoon olive oil. 3. 1 teaspoon kosher salt. 4. 1 small head of cauliflower, cut into florets. 5. 2 cups of whole milk. 6. Bay leaves. 7. 4 tablespoons of butter. 8. Grated parmesan cheese. Process: 1. Pre-heat the oven to 450 degrees. 2. Scrub the potatoes under running water; dry them, and rub the skin of each with oil and salt. Pierce the skin of each in 3 or 4 places with a fork. 3. Place the potatoes in the oven, and roast for 45-60 minutes, depending on the size of the potatoes, until they offer no resistance when a knife is inserted in their centers. 4. While the potatoes are baking, put the cauliflower into a saucepan set over medium-high heat, and add the milk and bay leaves. Heat until almost boiling, then reduce to low, and simmer until tender, 20 or so minutes. 5. When the potatoes are done, remove them from the oven, slice them open down the middle and use a spoon to scrape out the flesh into a bowl. Add the butter, the cauliflower and some milk, and mash to combine. 6. Spoon the mixture back into the empty jackets, place on a baking sheet and shower with cheese. Return to the oven and bake for 15 minutes until the cheese is melted and golden brown. Now, wasnt that so easy? I enjoyed my Country bread with roasted pumpkin seeds and a twice baked potato with a bottle of Guiness beer as I watched the World Series. I really enjoyed the combination.
