Bread of the day: Crostini topped with sautéed mushrooms, garlic, and parsley. Greetings friends. Today, I take Crostini to another level. I love making Crostinis because the toppings I choose are limitless. Today, I used Country bread instead of Baguettes. Why? To be honest, with Country bread, I get to use my sourdough starter that I nuture and take care of each day. Ingredients 1. Water (80 degrees). 2. Leaven-200 grams. 3. White flour-900 grams. 4. Whole wheat flour-100 grams. 5. Salt-20 grams. 6. Garlic-1 or 2 cloves. 7. Parsley. 8. Mushrooms. 9. Butter-2 tablespoons. 10. Olive oil-2 tablespoons. Process: 1. Make the leaven 8 hours before incorporating it with the rest of the ingredients. Once again, I used my proofing box to ensure it rose during the cold weather. The leaven must also pass the float test. Take a teaspoon and place it in a bowl of water. if it rises, youre ready to make bread. 2. Incorporate the leaven with the rest of the ingredients except the salt. 3. After the first turn or rise, incorporate the salt. 4. Let the bread rise 4-5 hours; turning it every 30 minutes or so. 5. After the bread has risen, retard it in the refrigerator for 4-5 hours. You can also retard it in the proofing box. I retard it in the refrigerator because it develops more taste and is less acidic. 6. Remove from the refrigerator. Set the oven to 500 degrees and place a Dutch oven within. 7. Score the dough. Put the dough in the Dutch Oven and place it in the oven. Reduce heat to 450 degrees. 8. Bake in the Dutch Oven for 20 minutes. After 20 minutes, remove the top and bake for 20 minutes more. 9. After 40 minutes or so, remove from the oven and let cool. 10. I then sliced several pieces of bread and coated them with olive oil. I placed them in the oven at 425 degrees and toasted them for 10 minutes. 11. While they were toasting, I lightly sautéed the mushrooms in butter, olive oil, parsley, and garlic. 12. Upon removal of the toasted bread from the oven, I spread the delicious topping on it and served. Now, wasnt that simple? And, the Crostini was delicious. I enjoyed every bite.
