Breakfast Polenta with Apples, Walnuts, and Maple Syrup Polenta is essentially cornmeal that’s cooked slowly and flavoured with cheese, herbs, and tomatoes as a savoury side dish. Preparation time: 15 minutes Cooking time: 45 minutes Yield: 4 servings 1 quart / 950ml water 1 cup polenta-type cornmeal 1⁄2 teaspoon salt 2 tablespoons soy or yogurt margarine 1⁄2 cup non-fat ricotta cheese 1 tablespoon maple syrup 2 tart green cooking apples 1 tablespoon walnut oil 1 tablespoon sugar 1⁄4 cup fresh walnuts Maple (or apple) syrup to taste 1 Bring the liquid to a boil in a heavy-bottomed pot on the top of the stove. Whisk in the polenta and salt. Cook very slowly over low heat stirring constantly with a wooden spoon until the spoon can stand up, supported in the mixture. This usually takes about 20 minutes. Stir in the margarine, ricotta, and maple syrup. Cover and keep warm. (If you are going to hold it awhile before serving, stir in 1⁄2 cup or more water.) 2 Peel, core, and slice the apples in 1⁄2-inch slices. Heat walnut oil in a medium-sized sauté pan over medium-high heat. Add the sliced apples; sprinkle with the sugar. Continue to cook the apples, turning occasionally, until the apples are soft when pierced with a fork. Set aside. 3 Meanwhile, heat a separate small sauté pan over medium-high heat. Add the walnuts, tossing until slightly toasted. Remove from heat. To serve, place a serving of polenta in a bowl, cover with apples, sprinkle with walnuts, and serve with 1⁄2 cup non-fat Greek yogurt for extra protein (adds 60 calories).
