Buckwheat Week: Recipe for Buckwheat Porridge. Ive used groats in this recipe. Buckwheat groats (image below) - raw, unroasted buckwheat groats are buckwheat kernels that are stripped of their inedible outer coating and then crushed into smaller pieces. Unprocessed white groats are slightly bitter, so before you cook them its a good idea to toast them for several minutes until theyre rust-colored. This removes the bitterness and brings out a pleasant, nutty flavor. If you dont want to do this yourself, you can buy already roasted groats, called kasha. Serves 4-6 2 cups clean water 1 cup buckwheat, groats. Soaking (then draining) them overnight will reduce the cooking time in the morning and activate the buckwheat. 1/2 tsp unrefined salt 2 tbsp any sweetener like maple, rice, coconut, raw agave syrup OR 2 organic dates, chopped, 2 tbsp raisins or white mulberries 1/2 tsp cinnamon 1 tsp vanilla extract 1/4 cup milk - coconut, organic soy, almond, rice, oat, hemp. Toppings, to stir through after cooking the groats - 1 tbsp flax meal, chia or hemp seeds, or LSA 1 tbsp almond, or any nut butter A few tbsp of any raw or stewed fruit in season. 2 tbsp raw, activated or toasted pistachios 1 tbsp grated citrus zest - orange, lemon, lime, blood orange 2 tbsp coconut, shredded or flakes Method - 1. Place the water and groats to a soup pot. 2. Add in the salt, cinnamon, sweetener and vanilla. Bring to a boil, cover with lid and reduce to a simmer. 3. Allow the buckwheat to simmer for at least ten minutes – check the texture of the groats. They should still have a firmness to them, and not mushy 4. Once the groats are cooked and all the water absorbed, add in your milk and continue to simmer with the lid off. 5. Now add in your toppings - anything that you want to melt into the porridge. 6. If you leave it to stand for a few minutes, your porridge will thicken more. 7. Serve with fruit, a splash of your milk and perhaps a tiny sprinkling of cinnamon and nuts to finish. #buckwheatweek #janellapurcell
