Buglama is a common fish preparation on Turkeys Black Sea coast. It assumes different forms according to season, region and the cook. Im pretty sure Ill include no less than 3 versions in our book, because theyre all different and all delicious. This one I learned yesterday. Besides fish (sea trout and bonito, here), salt and a teeny bit of olive oil, only three ingredients: tomatoes, onion and long thin green pepper. Like many recipes Im collecting out east: super easy but so, so good.
