Butter Chicken ~ Once again this is my jhatpat, on-a-whim dish. Butter Chicken purists please do excuse my casual, hurried recipe. We were craving butter chicken and absolutely had to have it for the next meal. I can assure you it tasted quite authentic :) Ingredients: Made with store bought, ready made tandoori chicken (medium sized, whole chicken) 2-3 tbsp of oil 2 medium onions 8-10 garlic cloves 2 inch piece ginger 1 tbsp tomato paste (I used canned variety) 1/2 tsp garam masala pdr (I roast them whole and then coarse grind them at home. The mix includes black & green cardamom, cloves, black pepper, cinnamon, nutmeg, star anise) 1-2 tsp red chili pdr 2 tsp tandoori masala pdr (I used Swad brand) Few drops of saffron essence 1/2 cup heavy cream Fresh Cilantro Salt Process: Heat oil in a pan. Add onion-ginger-garlic (OGG) paste and sauté well until the oil separates. Add some tomato puree/paste (I use canned stuff) and cut up TC pieces and mix well with the OGG masala. Add garam masala pdr, red chili pdr, a few drops of saffron essence and 2-3 tsp of almond or cashew powder. I also add a tsp or two of Swad brand tandoori masala pdr. Salt to taste. Mix everything well and cook on low heat by adding little amount of water intermittently. Once the masala is nicely cooked and blended with the chicken pieces add heavy cream, bring to a boil and turn off the heat. Let it stand for 10 minutes. Garnish with chopped fresh cilantro and a light drizzle of heavy cream. Enjoy with tandoori roti or naan.
