CAJUN CATFISH WITH TOMATO-CORN RELISH All you need: Catfish 2 Tbsp. light mayonnaise 3 tsp. chopped parsley 3 tsp. Louisiana Cajun seasoning ½ tsp. Dijon mustard ¾ cup panko bread crumbs 2 tbsp. Parmesan cheese 4 catfish fillets (1 ½ lbs.) Tomato-Corn Relish 1 tsp. canola oil 1 medium celery, diced 1 medium yellow onion, diced ½ green bell pepper, diced 2 cups frozen corn 2/3 cup quartered grape tomatoes 1 dash hot sauce All you do:Prepare Catfish: Preheat oven to 375F. In small bowl, combine mayonnaise, 1 tsp. parsley, ¾ tsp. Cajun seasoning and mustard. In separate bowl, combine breadcrumbs with Parmesan. Spray a 13x9 inch glass or metal baking dish with cooking spray. Arrange catfish in baking dish. Spread mayonnaise mixture evenly over fish, then sprinkle with panko mixture. Bake 25 minutes. Meanwhile, prepare relish. In a skillet, heat oil over medium-high heat. Add celery, onion, and bell pepper, and cook 3 minutes, stirring occasionally. Stir in corn, tomatoes, and remaining 2 ¼ tsp. Cajun seasoning, cook 2 to 3 minutes or until vegetables are tender. Remove from heat and finish with the rest of the parsley and hot sauce.
