CANNING TIP: Do you have a rack in the bottom of your water canner? are you leaving a good 2 inches of water OVER the tops of your jars when submerged in water bath? Hope the answer if YES to both of my questions... the rack lifts jars up off the bottom and lets air/water flow around jar, helps prevent cracking of jars and ensures air is forced OUT of jars (*killing bacteria causing enzymes) in the process... :) Diane
