CARROTS WITH LEMON AND MARSALA. Makes 4 servings. Ingredients: 3 tablespoons olive oil, 1 ½ pounds carrots, peeled, quartered, and cut into 2-inch-long strips, 1/2 cup marsala wine, 2 tablespoons flat-leaf parsley, finely chopped, 1 teaspoon freshly squeezed lemon juice. Salt and pepper to taste. Preparation: Set a pan over medium heat. When hot, add olive oil and carrots. Cook, stirring frequently, for 4 to 6 minutes. Season with salt and pepper and add marsala wine. Cover the pan and cook for 12 minutes. When fork tender, add parsley and lemon juice and serve.
