CHICKEN LOAF (Serves 6-8) Easy to prepare and very enjoyable. Can be eaten hot or cold, or even frozen for later. Complimented by salad, green veges. 500gm lean minced chickcn 2-3 cups mix of cauliflower, celery or bean sprouts 2 cups fresh chopped mushrooms 4 large or 5 medium eggs 2-3 cloves garlic chopped finely 2 tsps Himalayan Salt 2 tbsps mixed dried herbs Optional: 1/2 tsp paprika, chilli or pepper Alternatives 1) leave out mushrooms and use other veges 2) use cabbage or sprouts instead of cauliflower 3) use other veges that are readily available Preheat oven to 180 degrees Celsius. Wash and chop all veges. In a bowl, blend eggs and add spices. Place all ingredients, including the eggs in a large bowl and combine thoroughly with a spoon. Pour into a medium 6cm deep baking dish (1.5L) and bake 90 minutes. Test with fork to see if cooked. Serve or refrigerate. Leftovers can be plastic wrapped in single portions and frozen. Enjoy!
