CHICKEN PÂTÉ (Yield: 1-3/4 cups) 1-1/2 cups finely chopped cooked chicken 1 8-ounce package cream cheese, softened 3 tablespoon chopped onion 2 tablespoons dry sherry 2 tablespoons mayonnaise 2 teaspoon lemon juice 1/4 teaspoon hot pepper sauce 1/8 teaspoon ground nutmeg Paprika Spray a 2-cup mold with non-stick vegetable spray. In a blender, combine chicken, cream cheese, onion, sherry, mayonnaise, lemon juice, pepper sauce, and nutmeg; blend until smooth. Transfer to prepared mold. Cover and chill overnight. Unmold onto a serving plate; sprinkle with paprika. Garnish with parsley sprigs, if desired.
