CHICKEN & SCALLION LETTUCE WRAPS Makes about 12 small wraps ¼ c. oyster sauce 2 tsp. soy sauce ¼ c. sherry 1 tsp. sugar 1 ½ tbl. vegetable oil ¼ tsp. sesame oil 3 cloves garlic, crushed 3 tsp. grated fresh ginger 6 scallions, sliced fine 1 lb. ground chicken 3 ½ oz. water chestnuts, drained and finely chopped 2 tbl. peanuts, toasted and finely chopped 12 small lettuce leaves, preferably Boston lettuce 1. Make stir fry sauce. Combine oyster and soy sauces, sherry and sugar in small bowl and stir until sugar dissolves. 2. Heat skillet over high heat, then add vegetable and sesame oils and swirl to coat. Add garlic, ginger, and half the scallions and fry 1 minute. Add the ground chicken and cook for 3 to 4 minutes, or until just cooked, breaking up any lumps. 3. Add water chestnuts and remaining scallions, then pour in stir fry sauce. Cook for 2 to 3 minutes, or until the liquid reduces a little. 4. Divide among lettuce cups. Sprinkle with chopped peanuts, then serve.
