CHILI 3 lb. boneless beef, round or chuck, cut into 3/4 inch pieces 3 Tbsp. vegetable oil 1/2 c. hot chili powder 3 medium onions, chopped 4 cloves garlic, minced 1 (7 oz.) can jalapeno peppers, chopped 1 (28 oz.) can tomatoes & juice 1 Tbsp. oregano 3 bay leaves 1 Tbsp. coarsely ground salt 1 Tbsp. red wine vinegar 2 Tbsp. brown sugar 1 pt. ripe olives, drained & sliced 1 Tbsp. masa harina shredded cheddar cheese Brown beef in oil, add chili to meat and stir (put in big pot). Saute onion, garlic and pepper in oil until browned. Add to meat with tomatoes. Cook 20 minutes, add spices, vinegar, sugar. Cook slowly for 2 hours.
