CHILLI SAUCE: 3x Cloves of Garlic, peeled and chopped 1 Inch of fresh Ginger, peeled and chopped 5x Medium Chillies, chopped 30ml of Oil Salt & Pepper 3 Sprigs of Thyme 30ml White Wine Sugar to taste (+-20g) 1x Tin Whole peeled Tomato (3kg) METHOD: Saute onions, chilli, garlic and ginger in oil till translucent. Add white wine and thyme and saute. Add the whole peeled tomatoes and bring to a simmer. Adjust seasoning with salt and pepper and add sugar. Simmer for about 30 minutes and blend till its smooth. (T he sauce must NOT be sweet, but merely to break the acidity of the tomato.)
