CINNAMON BUN RECIPE: 5 Lbs flour = 15 cups 1-1/2 cups sugar 4 tsp salt 3 pks of rapid rise yeast ( each pack contain 1/4 onz, which will be equivalent to 2 pks of fermipan back home. 1 1/4 lbs of crico lard / blanquita or margarine 3 cans of coconut milk or 4- 1/2 cups of fresh grated coconut milk. INSTRUCTIONS: Mix all ingredients together, then add the coconut milk, kneed till flour comes together and continue to kneed until flour looks smooth on the surface, let it sit for about 10 minutes, then kneed for the second time until the surface becomes smooth. Let it sit and rise to double the size. In a separate container; u will mix 1/8 cup of cinnamon to 1 cup of sugar and set aside until u are ready to roll the flour for the bun. Once the flour is rise; u will then cut pieces of into about 3 inches each, which will be a bit bigger than a golf ball; roll out length wise to about 24 inches long....my judgement may not be too accurate but any how, u do it desire length. Once it is roll to desire length u sprinkle the sugar on the surface of the counter top and roll the flour in it, then shape it to the bun, once u have completed this process, let it sit to rise double the size, then put to bake @350 degrees, once they start to brown, u will then coat them with margarine and put back in the oven to bake until they become a little darker and once they become a little darker u will then coat them with coconut topping and put back in the oven to bake until they are golden brown and the topping is bubbling on them. U then take them out and coat them again with the coconut topping. I usually use a brush for coating them. COCONUT TOPPING: 2 cans of coconut milk or 3 cups of fresh grated coconut milk. 1 lbs of confectioners sugar 2 sticks of margarine and 3 tbs of vanilla. INSTRUCTIONS TO COOK TOPPING: Combine all ingredients into a medium size pot, let it boil until it looks creamy and turn on low fire and continue simmer for about 5 minutes. NOTE: These cinnamon buns are my number 1 seller here in Cayman. I cant go a week with out baking them or else Im in trouble. Customers loves them so; that they named them addictive buns ( this is not a joke or self praise) if you decide to try them u will understand why! One of the reason they love so much is because the cinnamon is not over-powering. They have even gone to extreme in saying that they will not spend another dollar at Super Market on cinnamon buns, as long as I am making them, so with that being said; i encourage you to try them and give me ur feedback,!!!pls refer to the picture below.
