CINNAMON QUICK BREAD 1c salted butter, at room temperature 2c sugar 2 eggs 2c buttermilk 4c flour 2t baking soda 2/3 cups sugar 2 teaspoons cinnamon cream together butter, 2c sugar, and eggs. add milk, flour, and baking soda. pour 1/2 of batter into 2 sprayed loaf pans (1/4 in each pan). in a separate bowl, mix the 2/3 c sugar and cinnamon. sprinkle 3/4 of cinnamon mixture on top of the batter in each pan. add remaining batter to pans and sprinkle with last of cinnamon topping. swirl with a knife. bake at 350* for 45-50 min. or until a toothpick comes out clean.
