COCONUT, BANANA & MACADAMIA PORRIDGE Perfect for a cold winter’s morning. I like to make a variety of breakfasts for the boys through the week. Keeps them guessing ;-0 I switch between savoury meals and more sweet ones like this porridge. I’ve learnt the recipes gradually over time and now being part of my repertoire, are quick and fuss-free to make. It’s peace of mind knowing the boys are getting protein, good fats & nutritious energy for their busy day. This porridge is a favourite. TO PREPARE THE OATS THE NIGHT BEFORE: (4 small serves) • 1 cup traditional rolled or cracked oats (not quick oats). • 1 cup warm filtered water plus 2 tablespoons whey, natural yoghurt OR kefir Mix oats with warm water mixture, cover & leave in a warm place for at least 7 hours. WHY? Well, this is the traditional way of preparing oats. A forgotten tradition. In a time-poor world we look for quick meals, we buy “quick oats”, we microwave, we rush our food. Going back to TRADITIONAL ways can help heal our bodies. Before I soaked grains (& nuts) I had trouble digesting them. Now, no problem. xo One of my favourite books, NOURISHING TRADITIONS by Sally Fallon, explains; “Soaking allows enzymes, lactobacilli and other helpful organisms to break down and neutralize a large portion of phytic acid in grains. The simple practice of soaking cereal grains overnight will vastly improve their nutritional benefits”. Without going into detail here, phytic acid is an enzyme inhibitor, so basically makes it hard for our body to digest. Here is a link to Weston A. Price explaining this method- westonaprice.org/health-topics/living-with-phytic-acid/ IN THE MORNING: (should only take about 5 minutes) • coconut milk (enough to cover the oats) • banana (chopped) • ½ cup macadamia nuts *ideally activated (soaked overnight) • organic pure maple syrup • optional- fruit, cinnamon, crushed nuts, organic coconut to serve RINSE the soaked oats & put in saucepan POUR in coconut milk (& half water if you prefer) to just cover the oats. ADD macadamia nuts & a drizzle of maple syrup to taste. SIMMER whilst stirring for about 2 minutes, then add banana SIMMER for about 3 minutes until you reach desired consistency. SERVE straight away with your choice of fruit, cinnamon or crushed nuts. xoxoxoxoxoxoxoxoxo
