CREAMY PARMESAN MASHED POTATOES Ingredients 2 lbs. unpeeled, cubed red potatoes 1 packet Parmesan Peppercorn Warm Dip Mix 8 oz. cream cheese 3 Tbsp. softened butter salt and pepper to taste Directions In a large pot of boiling water, cook the potatoes until tender, about 15 minutes. Drain; reserve 2-3 tablespoons of water. In a bowl, mash potatoes with Parmesan Peppercorn Warm Dip Mix and cream cheese; adding reserved water as needed to reach desired consistency. Transfer the potato mixture to a greased slow cooker, cover; cook on low for 2-3 hours. Stir in butter and season with salt and pepper to taste just before serving. Makes 6-8 servings.
