CULINARY SOS! I just found out that I have to plan a Mardi Gras dinner menu for a really big event. In your opinion, what are the essential Mardi Gras dishes? Im thinking there has to be a gumbo, red beans and rice (carnivore and vegetarian versions), jambalaya, an etouffee and bread pudding for dessert. If it matters, the attendees will be college students from all over the country and a small number of international students. As you can guess, tastes, palates and preferences will be all over the place. I want to do NOLA and Louisiana natives proud, but also need please those who arent used to creole cuisine. Ill spill the beans about the specific college later.
