Cabbage Thoran Recipe: Anupama Michael Ingredients : 1 medium sized cabbage finely chopped 1 large onion finely chopped (I used 10 pearl onions instead) 1/4 tsp haldi Pwd... Salt to taste Ground coarsely without water : Coconut gratings 2 tbsps 4-5 mild green chillies (I used 2 hot green chillies) A pinch of jeera 2-3 pearls of garlic (I did not grind this, instead added it chopped after onions) 1/4 tsp haldi pwd Curry leaves 6-8 leaves For seasoning : Coconut oil (this brings out the authentic flavour of the dish) 1 tsp mustard seeds Curry leaves 1 whole dried Kashmiri red chilli (I broke one chilli into two halves) Method In an open non-stick pan take a tbsp of coconut oil, add the onions and saute till light brown. Add a 1/4 tsp of haldi pwd followed by the finely chopped cabbage. Add salt, mix well and cover and cook stirring occasionally. After 5 minutes, move the cabbage mix to the sides to create space in the centre of the pan. To this centre, add a little more coconut oil, add the mustard seeds, curry leaves and the dried red chilli. (I also added hing). After a minute or so, move this onto the cabbage and in the centre add the ground coconut masala. Cover this masala with the cabbage. Cover the pan and cook for 5 minutes. After 5 minutes, saute well till the cabbage is uniformly mixed with the seasoning and the coconut masala. Cover and cook till done. Enjoy this dish as is or serve alongside piping hot rice, sambhar and papadom. I mixed with plain rice too and enjoyed it.
