Camembert with apples and cherry jam tatin Ingredients 1 whole camembert approx 200g 200g fresh cherries 2 granny smith apples Lemon juice 3 tbsp brown sugar 4 tbsp red wine vinegar 4 tbsp red wine 20g butter Butter for ramekins Puff pastry Method Melt the butter and brown sugar, add the cherries cook for 1 minute add the red wine and vinegar and simmer for 5 minutes Grate the apples and add the lemon juice to prevent discolouring Brush the ramekins with butter, put the blueberry jam in the bottom, place the grated apple and top up with slices of camembert cheese Cover the ramekin with puff pastry and bake in a hot oven 220° C until pastry is cooked about 20 minutes, take out of the oven and overturn on a serving plate ,serve warm with mixed leaves
