Candy Cane Cake Made by my 10 yr old niece Grace!! Adapted from a Betty Crocker Recipe :) This is a DELICIOUS cake, perfect for any gathering such as ours we had yesterday and makes a wonderful dessert!! Just a subtle hint of peppermint flavor, very moist, iced to perfection and topped with crushed candy canes, a yummy coffee cake anytime and would also make a fab Bake sale treat!! Made in a bundt pan, it would prob serve 12-16 Gracies Candy Cane Cake Cake 1 box Betty Crocker™ SuperMoist™ white cake mix (this is a Betty Crocker recipe but I am sure any white or yellow cake mix is fine) 1/2 teaspoon red food color 1/2 teaspoon peppermint extract White Icing 1 cup powdered sugar 1tablespoon milk or water 1/2 teaspoon vanilla, if desired Decoration Crushed candy canes or crushed hard peppermint candies, if desired. Heat oven to 350°F (325°F for dark or nonstick pan). Generously grease and flour 12-cup fluted tube cake pan. Make cake batter as directed on box. Pour about 2 cups batter into pan. In small bowl, pour about 3/4 cup batter; stir in food color and peppermint extract. Carefully pour pink batter over white batter in pan. Carefully pour remaining white batter over pink batter. Bake and cool cake as directed on box. In small bowl, mix white icing ingredients. If necessary, stir in additional milk, 1 teaspoon at a time, until smooth and spreadable. Spread over cake. Sprinkle crushed candy on top. Store loosely covered. **BLC TIPS - #1 - Grace used a tub of prepared vanilla frosting/icing for the frosting. Her daddy warmed it up in the microwave until smooth and a bit runny in order to pour over the cooled cake :) #2 - Fluted tube/Bundt cake pans can be a challenge to grease. Try this: Place a dab of shortening on the outside of a small food-storage plastic bag. Slip the bag on your hand and rub shortening on the inside of the pan. Repeat with more shortening until every nook and cranny is greased. Give the inside of the pan a good sprinkling with flour, shake excess from pan, and your baked cake will slip right out!
