Canning Vegetable Soup 6 qt.. Peeled and diced up tomato’s 1 qt. diced onions 1 qt sliced thin carrots 1/ 2 quart fried okra ½ qt diced celery ½ quart cooked soup beans rinsed 4 qt diced peeled potato’s 1 qt. baby lima beans frozen - unthawed 1 qt field peas your choice 3 qt. cut off corn scrape cobs 1 c. dried black eyed peas ½ qt cut green beans optional 2 bell peppers chopped 1 small bag of frozen English peas 6 qt tomato juice 1 qt elbow macaroni half cooked - drained Note: 1 tsp plain salt - Per Quart ½ tsp plain salt - Per Pint Mix all ingredients using large pots or dish pans. Cook for 25 minutes. Ladle soup into clean quart or pint jars add PLAIN SALT. Wipe rims of jars place on scalded lids and tighten. Process in a large pressure cooker containing wire rack and 6 quarts of hot water . Place jars of soup in place on lid of pressure cooker and secure. Turn on heating unit to med heat and open steam valve on cooker. When steam comes out shut valve and keep an eye on pressure valve let it climb to 12 lb pressure. Cook for 1 hr. 20 min. for Quarts, Pints 1 hr. Let cooker cool until pressure gage is 0. Release steam valve remove lid let all steam reside and remove jars set aside to seal. Its best to have to canners to speed things up. Cook one and have one ready to cook. Optional you can cook for 1 hr on stove let cool and place into freezer bags and freeze. Add seasonings when unthawed and reheated. Optional when opened and re heated to serve you can add cooked hamburger meats drained and roast beef with gravy or dice up chicken. Enjoy. CAUTION: Always keep an eye on your gauge do not leave the cooker un attended. If gauge climbs to high just shut off heat leave the room until gauge drops back to normal then place heating unit to low and continue processing. Optional you can add 7 cans of beef and gravy to this mix and turn out vegetable beef soup or you can , leave recipe as is and when you open a jar to re heat add 1 reg. can of beef and gravy to it or cook hamburger meat drain and add to your soup.
