Canning help please: A farmer gave me a screaming deal on a box of 20 pounds of organic heirloom tomatoes that are going bad soon. I dont usually can sauces, just plain tomatoes, then make sauce as needed. But this is too few tomatoes to bother with canning, and they arent the Romas I usually use. What I WANT to do is make a small batch of pasta sauce to can in the water bath canner, using a green pepper that I happen to have on hand and onions, garlic and fresh herbs (all of which I also have on hand). Does anyone have a tasty sauce recipe suitable for canning in a water bath canner, using mostly beefsteak tomatoes? Id make this up myself, but I am paranoid about the acidity. And yes, I have a pressure canner, so I could go that route...but if I do, does that mean the acidity doesnt matter?? Thank you for any help!!! (P.S. I also happen to have mushrooms on hand...)
