Cant sleep. So I picked up a book and started reading. A cooks tour by Anthony Bourdain - have to finish the last couple chapters left over from my own jetsetter adventures. Stomach starts grumbling. Better start cooking a midnight snack. But no, I cant chomp on a sloppily made PB&J while reading about Anthonys search for the greatest food ever. No. Im thinly slicing handpicked potatoes and simmering some turkey gravy - pulled together from the tastebud-awakening turkey bacon I picked up this morning. After frenching the potatoes into crispy golden-brown fries, Im tossing those bad boys in the oven, with the sweet, sweet duo of bacon and fresh pepper jack cheese curds at a low heat so the cheese melts just right. After pulling the concoction from the oven, I artfully drizzle the gravy on top to recreate a Canadian culinary classic and bring back poutine to the late night marvel it once began. Spent an hour or so on these mouthwatering morsels, when realistically I couldve settled on a hot pocket. #ineedamicrowave
