Capirotada/Sopa Recipe T = tablespoon t = teaspoon 12 to 14 slices of day old bread (either homemade or Italian/French bread) 2 cups sugar 3 -1/2 cups water 1 t cinnamon 5 T butter 1/2 cup raisins 1-1/2 t vanilla 1/2 cup pinon nuts 1 -1/2 t vanilla 1 cup shredded cheddar, Jack cheese 1 cup sweet wine (if you wish) Preheat oven to 350 degrees, Butter baking dish. Tear bread into 1-inch pieces and toast for ten minutes. Place in bowl and toss bread and pinon nuts. To brown the sugar place two cups in saucepan over medium heat. Stirring with a wire whisk until sugar melts and turns caramel color. Add water carefully so that the syrup will not splatter on you. The caramel may solidify but will liquify as it reheats. Reduce heat and add raisins, butter and vanilla to the syrup while it is hot. Stir until butter has melted. Pour syrup mixture over the bread mixture and soak well. Place mixture in the buttered baking dish. Top with cheddar cheese and bake for one half hour (30 min). You may make a lemon sauce. Some people like it with whipped cream and or ice cream.
