Carb free schnitzel ( wheat, gluten, dairy, sugar and grain free ) Serves 2 2 pork loin steaks 3 small bags of pork scratchings 1 egg Oil ( or butter for frying ) Blend the pork scratchings into crumbs Beat the egg yolk and white together Lay the pork steaks flat on a work surface and hit them repeatedly with a rolling pin across the whole surface until half the original thickness Dip each steak into the egg mixture and then coat with the pork crumbs Fry for a couple of minutes each side to give more colour and then finish the cooking and crisp them up by baking in the oven for about fifteen minutes at 180.
