Carb loading with pasta and bread seems to be the norm for many athletes. I see this with high school running and swim teams. The one thing this article does not discuss, which I HAVE seen in my practice is the very real effects of gluten. Carb loading with wheat, such as pasta and breads, wreaks havoc on your body. Ive seen Leaky Gut Syndrome, and even Hashimotos Thyroiditis develop in patients who seem to be in incredible shape, and then cant figure out why theyre starting to get tired all the time, or their immune systems arent strong anymore. After being so diligent and motivated for years, these athletes have hurt their bodies with the gluten during their carb loads. If you must carb load- at least realize that a cupcake is not the same as fruit or rice. A sweet potato is a great source of carbs. In general, the up and down insulin roller coaster of carb loading, along with the gluten, cannot be good for the body. The gels that endurance athletes consume during a long run- say over 1 hour- seem to be a better way to refill your glycogen stores when the glucose is actually needed in the blood stream.
