Cauliflower Mashed Potatoes 2 lbs peeled and cubed potatoes (I used russet) 1 head of cauliflower, chopped into bite size florets 1/2 cup sour cream (I used fat free) 2 tbsp butter 4-5 tbsp fresh chopped chives (or to taste) Bring potatoes to a boil in a large pot of salted water. Cook for about 10 minutes or until fork tender. Add cauliflower for last 5 minutes of cooking. Drain and return to the pot. Add sour cream and butter. Mash with a potato masher or ricer if you have one. Stir in chives. Season with salt and pepper if desired. I always add a few extra chives on top for color
