Cauliflower Pizza Crust: you can double recipe to make bigger pizza like I do:) 1/2 head Cauliflower, coarsely chopped 1/2 cup shredded Italian cheese blend( I just use Mozzarella) 1/4 cup chopped parsley 1 egg 1 teaspoon chopped garlic salt and ground pepper two taste Directions: Place cauliflower pieces through feeding tube of the food processor using the grating blade; pulse until all the cauliflower is shredded. place the pile of shredded cauliflower on a thin cloth/ dish towel and wrap it up tight and ring it out over sink so all the water is squeezed out of it. This is the hard part. there is so much water in cauliflower.. any other suggestions as to get the most moisture out .. please let me know:) Then dump cauliflower in a big mixing bowl. preheat oven to 425 degrees F. Line a baking sheet with parchment paper or a silicon mat. Stir all ingredients in the mixing bowl. Pour mixture onto the repaired baking sheet; press and shape into a pizza crust.. ( the thinner crust seems to be better as far as consistency) Bake for 15 minutes and then up the temp to 450 F and bake for another 10. The crust should be brown and ready! Take out and then put on all the toppings you would like and put back in oven till all melted etc.... I have yet to get the crust hard like wheat pizza.. so we eat it with a fork .. kinda like quiche. Its so darn delicious!! Use Pizza sauce that has a max of 3g sugar per serving. xoxo enjoy this healthy meal!
