Chapati are ubiquitous in most of Northern and Central India in one form or another. Made with wheat flour (Atta) or one of many other ground grains or a mix of them. Think of them as Tortillas. But tortillas with a special personality. Tortillas with a PhD. These are just a tad more indulged when being made. It takes a chapati a minute or a tad more or less to be made. Totally worth all the effort. We feel rather lucky to have them at both lunch and dinner. Made to order. So we have steam warming our hands and faces as we savor them with the meal. Handmade and comfort food - take on new meaning once you have been lucky enough to have these. Magical. Heavenly. Comforting. Indulgent. Blessed.
