Chapter 1. Preparation is the key First, you have to prepare two magic ingredients – Magic Salt and Magic Oil 1. Magic Salt Buy sesame seeds (in any supermarket) and fry on a Teflon fry pan together with the salt until sesame seeds are nice and golden. No oil!!! Proportions: 9 parts of sesame seeds, 1 part of salt, could be less salt, more seeds. Salt is one of the unhealthiest ingredients in our food, so preparation of Magic Salt is very important, as it will replace the common salt in all dishes we are going to cook. If for some reasons, you did not find sesame seeds in your nearest supermarket, you can fry cashew nuts instead. If you can try to buy Sea salt, it has more minerals your body needs. As soon as the seeds (nuts) plus added sea salt are golden fried, you have to place it in a grinder (you can use a usual blender) and just grind it a little bit and place is then in a glass jar. Magic Salt is ready and you will use it in many recipes I am going to share with you later. 2. Magic Kasha Kasha is a Russian word to indicate all types and sorts of dried cereal grains. Wikipedia gives the following definition of Kasha: Kasha is a cereal commonly eaten in Eastern Europe. In English, kasha generally refers to buckwheat groats, but in Slavic Europe, it refers to porridge in general and can be made from buckwheat or any cereal wheat, barley, oats, millet and rye. At least a thousand years old, kasha is one of the oldest known dishes in Eastern European Slavic cuisine. Kasha will be our secret weapon in our campaign for weight reduction and health improvement. Kasha rebalances our stomach acids, forces our colon/intenstines to work, reduces our sugar level and ultimately consumes more calories in getting digested than delivering calories through itself consumption. Basically more Kasha you eat, faster you lose fat on your stomach, thighs and bottom. I suggest you go to the nearest Russian shop as I tried grains sold in British supermarkets and Holland&Barret and Russian grains are heaven tastier. Buy buckwheat, semolina (but definitely Russian), barley, oats, millet and rye and of course rice. Kasha is a real magic food. It cost about £2 to buy a pack of buckwheat in a shop. It lasts at least a week, if you eat buckwheat only! It lasts months if you eat it with other ingredients such as vegetables, which I will introduce in next chapters. Basically it is a recipe for a second mortgage. Cooking Kasha is very simple. Take a pan and pour one cup of grains and 4 the same cups of water. Boil for about 10-15 minutes from the moment it started boiling, you will see that the grains will increase in the bulk about three to four times. It is a very good idea to stir the mass from time to time to prevent it from burning to the bottom of the pan. After 10-15 minutes, turn the hob off, place the lid onto the pan and place the pan inside of a duvet and leave it for another hour or so. Kasha will absorb the remaining water and will become nice, soft and tender. Practice Cook any Kasha of your choice. Put a portion in a blender (if you do not have a blender, skip the action, which is absolutely fine, I do it all the time) and serve immediately with a sprinkle of any vegetable oil (olive, corn, sesame or any other) and a bit of chopped parsley. Salt with the Magic salt. Bon appetite!
