Check out this super easy, delicious and healthy grilled fish taco recipe...you can do it inside or outside so it is perfect for year round dinners!! ****************************************************** Grilled Fish Tacos Friend me on Facebook A delicious & healthy grilled fish taco that is perfect for a weeknight meal Prep Time - 15 min Cook Time - 20 min Total Time - 45 min Ingredients 16 oz Tilapia Filets 6 medium Limes 1 tsp Salt 1 tsp Pepper 4 tablespoons Light Sour Cream 4 tablespoons Salsa Verde 8 Corn Tortillas Toppings 1 medium Avocado (Chopped) 1/4 cup Cilantro (Chopped) 1 cup Chopped Greens (I used salad mix, you could use cabbage or anything you have on hand) 1 small Bell Pepper (Chopped) 1 small Tomato (Chopped Salsa Cream Sauce 1.In a medium bowl, mix together the Salsa Verde, Sour Cream, the juice & zest of 1 lime, until smooth and well combines 2.Cover and refrigerate for at least 30 minutes or up to 2 days Tilapia 1.Preheat Grill pan or Grill to medium (I use a grill pan but if using an outside grill use a basket or cover the grill with foil as tilapia is a very fragile, flaky fish) 2.Season tilapia filets with remaining lime, salt & pepper on both sides 3.Cook tilapia for about 3-4 minutes then flip, and cook an additional 2-3 minutes, making sure to not overcook the fish 4.Set aside on a plate and keep warm Tortillas 1.Spray the grill pan or grill with nonstick spray or olive oil (we use an olive oil mister) 2.Grill each tortilla until it is warm and has a few char marks Assembling Tacos 1.Take 2 charred tortillas and gently fold in half to make a taco shell 2.Fill a taco shell with the chopped greens, top with 1/2 of a tilapia filet, 1/2 tbsp. salsa cream sauce and any additional topping your prefer - we used avocado (1/8 for each taco), cilantro & bell peppers 3.Repeat for each taco shell 4.Serve & ENJOY!!
