Chads Favourite Hamburger Recipe Serves 1 Hamburger patty: Venison mince 200g Red onion ½, roughly chopped Parsley 3T, roughly chopped Green chilli 1, sliced Salt and pepper for seasoning Onion Marmalade: Butter 1T Extra virgin olive oil 1T White onion 1, sliced Garlic clove 1, roughly chopped White sugar ¼ cup Paprika 2t Balsamic vinegar ¼ cup Magic mayo: Mayonnaise 4T Honey 2T Paprika 2t Roasted pepper: Red pepper ½, cut into chunks Extra virgin olive oil 2T Salt and pepper for seasoning Haloumi cheese, 2 thick slices Rocket for garnishing Lemon ½ Hamburger bun 1 1 Preheat the oven to 180. 2 In a large mixing bowl, combine the mince, red onion, chilli, parsley and season with salt and pepper. Form the mixture into equal sized burger patties and set aside. 3 In a smaller bowl mix together the sauce ingredients and set aside. 4 To make the onion marmalade: Melt the butter and oil in a pot over medium heat. Add the onion slices and saute for about 3-4 minutes. Then add the garlic and sugar and allow to cook over a low heat for about 15-20 minutes, stirring occasionally. 5 In the meantime, place the red pepper chunks into an oven proof dish and drizzle with olive oil and season with salt and pepper. Place into the oven for about 10 minutes or until cooked and well coloured. 6 Add the paprika and balsamic vinegar to the onion mixture and allow to reduce to a syrup stage before removing from the heat. Remember to check on the peppers in the oven. 7 Fry off the hamburger patties in a bit of oil in a frying pan over medium to high heat. 8 In a frying pan, add a bit of olive oil and fry off the haloumi slices for about 30 seconds on each side and remove from the heat. 9 To assemble the burger: Slice the bun in half and on the bottom half, spoon over the sauce. Next add some rocket and the cooked burger patty. Squeeze over half a lemon before spooning over some onion marmalade. Finish off with the roasted red peppers and haloumi cheese and place the top half of the bun on top. Serve with additional sauce and chips. Enjoy @Charlene Pretorius
