Cheeseburger Meatloaf LOW CARB!! Ingredients: 1 lb ground chuck 10 slices bacon, cooked and crumbled 1 (8oz.) package Sharp Cheddar, grated 2 Large Eggs 1/4 cup Mayo 1/4 teaspoon salt 1/4 teaspoon ground black pepper 1/3 cup tomatoes or petite canned tomatoes, well drained 2 tablespoon prepared mustard 1/2 cup sweet onion, sautéed in butter until caramelized Directions: Preheat the oven to 350. Combine the ground beef, bacon, cheese, eggs, mayo, salt, pepper, and mustard. Mix Well in a large bowl. Then stir together the onions and tomatoes in a small bowl. (Keep a little onion on the side.) Put the meat mixture into a oven pan and shape into a loaf. Spread remaining onion/tomato mixture over meatloaf. Place in the oven. Bake 40 minutes Take out and Top with the rest of the sauteed onions Bake for another 15 to 20 minutes or until meat is no longer pink. Take out and let cool a few minutes before serving!
