Cheesy mushroom and bacon muffin Recipe: 2 eggs 1/2 cup sugar 1 cup milk 1/4 cup oil 1 cup flour 1/2 and 4 Tbsp. polenta 1 Tbsp. baking powder 1 tsp. salt 1/8 tsp. chili powder 5 pieces of bacon cut finely 1/4 cup grated cheese 1/2 red capsicum 10 pcs. mushroom cut finely 30 grams sundried tomato cut finely 1 tbsp. fresh herbs (parsley, oregano, rosemary) finely chopped 1/8 tsp. ground pepper 1 tablespoon moroccan spice mix 2 tablespoon capsicum paste 5 cloves of garlic finely chopped. Procedure: 1. Preheat oven to 350C. 2. Prepare all ingredients. Mix them together in one bowl using wooden spoon and make sure do not over mixed. 3. Scoop down muffin dough into well greased muffin tins. 4. Bake on preheated oven for 3 minutes at 350C. 5. Reduce oven temperature to 150C and bake further for another 5 minutes or until a tooth pick comes out clean when inserted. 6. Enjoy!
